Over the years, I’ve watched General Managers, Assistant GMs, and Kitchen Managers give everything they have, covering every shift, fighting to stay afloat, and feeling the pressure rise as sales dip and costs circle around them.

 

Seeing that strain pushed me to dive deeper. I wanted to understand why these challenges kept surfacing and, more importantly, how to solve them. As Director of Facilities for a restaurant group with more than 200 locations, I learned that real improvement doesn’t come from expensive equipment or flashy upgrades. It comes from practical, mechanical know-how, smart processes, and steady, back-to-basics solutions that teams can rely on when the tide gets rough.
